Smoker.

Heather and I have purchased a smoker. It's a Traeger auger fed wood pellet smoker. So far we have cooked a pork loin and chicken legs and thighs.
The pork loin came out fantastic. Tender and juicy.
The chicken on the other hand came out well.... let me explain.
I cooked the skin on chicken legs and thighs on a low heat. This was my first mistake. You have to cook poultry on a higher temperature. I didn't know this, but read about it later. (Dang my order). If you smoke poultry on a low temperature the skin becomes rubbery. The meat inside was fantastic. The skin was inedible.
I look forward to cooking a brisket soon.
